- Rinse the rice in cold running water several times until the water runs clear — use whatever kind of rice you like. Put the rinsed rice in a small pot, cover with clean water, salt to taste, and set it over the heat. Cook over moderate heat until tender or until all the water is absorbed. 2. Spread the rice out in a wider dish to cool. 3. Season the ground fish with salt to taste and a little ground black pepper, and mix. 4. Peel, rinse, and dry the onion, then finely dice it. Melt half the butter in a skillet, add the onion, and sauté over medium heat for 2–3 minutes until lightly golden. 5. Let the onion cool, then mix it thoroughly into the ground fish. 6. Preheat the oven to 350°F (180°C). 7. Once the rice has cooled, crack in one egg and mix. 8. Grease the bottom and sides of a deep glass or ceramic baking dish with the rest of the butter, then dust with half the breadcrumbs. 9. Layer the bake: spread half the rice on the bottom, then a layer of the ground fish, then the rest of the rice. 10. Whisk the remaining eggs with the milk until smooth and pour the mixture evenly over the rice, covering the whole surface. Sprinkle with the rest of the breadcrumbs. 11. Bake for about an hour. Garnish the finished rice-and-fish bake with parsley and serve! Enjoy!
