Pears in Lime Syrup with Chocolate Cream Sauce

A lovely dessert of pears poached in a bright lime syrup. I found this recipe ages ago in a cooking magazine, and it's been a favorite ever since. The key is choosing pears that are neither too firm nor too soft. Softer varieties like Bartlett can fall apart quickly, so if you reach for those, pick the firmer ones in the bunch.

    1. Wash, pat dry, and peel the pears.
    1. In a saucepan, bring 1 quart (1 liter) of water to a boil. Stir in the sugar and vanilla sugar, and simmer for 5 minutes.
    1. Lower the pears into the syrup, add the lime juice, and cook over low heat until the pears are tender. Lift them out and set them in a sieve to drain.
    1. For the sauce: melt the chocolate in a heatproof bowl set over simmering water (a double boiler). Pour in the cream and stir until smooth, then remove from the heat.
    1. Arrange the pears on plates, spoon the sauce over them, and garnish with lime zest and mint leaves.
    1. Serve with a scoop of vanilla or chocolate ice cream.
