- Besides its great taste, one of the best things about this dish is that it comes together in just 20–30 minutes — which counts for a lot in the holiday rush. Quick recipes are a real lifesaver, and this salad is exactly that kind of dish. 1. Hard-boil the eggs; you can do this ahead. There's usually more than one dish on the holiday table, and other salads likely call for eggs too, so boiling them all at once saves a little time. 2. With the eggs boiled, dice them. Unwrap the crab sticks, setting a couple aside to sprinkle on top later, and finely chop the rest. 3. Wash and dry the cucumber and green onion — it's best not to cut wet ingredients. Trim both ends of the cucumber and peel it (skip this and the salad won't be as delicate), then cut it into cubes. Finely chop the green onion. 4. In a deep bowl, combine the crab sticks, cucumber, eggs, and green onion. Grate the Parmesan on a coarse grater and add it in. Parmesan isn't the cheapest cheese, but another hard cheese just won't taste the same. 5. Dress the salad with mayonnaise and season with pepper to taste. Mix well, and don't forget to salt it. Spread the salad onto a flat platter. Grate the reserved crab sticks on a fine grater and sprinkle them over the top. 6. Now for the decorating. Cut ears, a tail, and a snout from the smoked sausage.
