Cooking method

Cooking time: 5 h 35 min

Cooking cakes:

1. Mix all the dry ingredients in a bowl.

2. In a separate bowl, combine all the wet ingredients, mix well, then add them to the dry mixture.

3. Beat everything together with a mixer for 2 minutes.

4. Divide the dough into three parts, turn on the oven to warm up to 180 degrees.

5. We cover the form with a diameter of 21 cm with parchment, pour out the third part of the dough, send it to the oven for 25 minutes.

6. Repeat the same with the other two parts of the test. There should be three cakes in total.

7. Ready-made cakes are allowed to cool in the molds for 20 minutes, after which we remove and leave on the grill until completely cooled.

Cooking ganache:

1. We bring the cream to a boil, after which we introduce butter, chocolate and jam into them, mix with quick movements, leave for a couple of minutes.

2. After a couple of minutes, mix everything until smooth, after which we leave the ganache to cool and thicken.

Preparing the glaze:

1. Pour the flour to the bottom of the saucepan, pour the milk, without ceasing to stir.

2. Put the saucepan on medium heat, bring to a boil, without ceasing to beat.

3. Keep on fire for a minute, then pour into a bowl, cover it with cling film and wait for cooling.

4. When the mass cools down, combine butter, sugar, salt, vanilla. Beat with a mixer at an average speed for 5 minutes.

Putting together a cake:

1. We level the cakes, then we smear each with blackberry ganache.

2. We put the cake in the refrigerator for 10 minutes.

3. Time has passed - we take out the cake, cover it with icing, level it and put it back in the refrigerator for 1 hour.

4. Decorate the cake with fresh berries and serve to the table.
