Pumpkin Millet Porridge

A great addition to a healthy, balanced diet! This pumpkin-millet porridge is served hot. If you like, you can top it with raisins, nuts, sweetened condensed milk, or a pat of butter.

  1. Step 1:

    Gather your main ingredients for the porridge: peeled pumpkin flesh, bright yellow millet, milk, sugar, salt, and water.

    Put the pumpkin in a saucepan, add 1–2 tablespoons of water, bring to a boil, and cook over low heat until the pumpkin is tender (about 15 minutes).

    Rinse the millet, pour boiling water over it, then add 1⅓ cups of water. Bring to a boil and cook for 15–20 minutes, until the millet is fully done.

    Purée the soft, cooked pumpkin with a blender.

    Combine the pumpkin purée with the cooked millet porridge, and add the sugar and salt.

    Pour in the hot milk and stir. If you'd like a thinner porridge, add as much more milk as you need.
