- Wash the nuts under cold water and spread them on a towel to dry. We won't mix the nuts together, since we'll grind them one at a time. First, put the cashews in a blender and grind them for 1 minute. Then add the almonds and run the blender again for 1 minute. Transfer the mixture to a bowl. Cut the banana flesh — it should be ripe and sweet — into several pieces and put it in the blender too. Blend until smooth, then add the banana purée to the nuts. Mix everything thoroughly with a tablespoon. Next, add the shredded coconut, setting aside a quarter of it to coat the balls later. Mix the mixture again, but this time with your hands, dampened with water. The consistency should be right for rolling into balls. If the "dough" is too soft, add a little more ground nuts or shredded coconut. Form balls of the size you like. If you wish, you can tuck a filling inside each one — a whole nut, a piece of dried fruit, a dried berry. Roll the formed balls in shredded coconut and place them on a parchment-lined baking sheet. Refrigerate the sheet for 1–1.5 hours. When the time is up, take the balls out of the refrigerator and serve. They're great with coffee or fragrant tea, as well as any other drinks. Both adults and kids are sure to love them. The little ones may find them not very sweet, especially if the banana wasn't very sweet. In that case, you can add a little natural sweetener, such as honey or maple syrup. Store these balls in the refrigerator for a couple of days. As a rule, they disappear much faster!
