Baked Rolls with Smoked Chicken

    1. First, cook the rice. It's best to use rice made specially for sushi, but if you don't have any, short-grain rice works too. Rinse it well several times until the water runs clear. Put the rice in a saucepan, cover with cold water, and cook with the lid on. Once it comes to a boil, turn the heat down to low and cook for another ten minutes. Now make the seasoning: stir the rice vinegar together with the salt and sugar and fold it into the warm rice. 2. Lay a sheet of nori on the mat, shiny side down. Dampen your hands with water and spread the rice over the sheet, leaving about an inch (3 cm) bare along the top edge. Lay down a strip of smoked chicken and soft cream cheese, and add a slice of fresh cucumber. If you like, you can also tuck in a strip of bell pepper — it's very tasty that way too. 3. Using the mat, roll the nori up into a tight log so it holds together, brushing the free edge with a little water to seal it. Cut the roll into 6–8 pieces with a very sharp knife. 4. Place the cut rolls in a baking dish lined with parchment paper. Sprinkle with grated cheese. Put it in a preheated oven, and once a cheese crust has formed on the rolls, the dish is ready!
