- First, cook the rice properly. You'll want special Japanese sushi rice; if you don't have any, short-grain rice will do. Rinse it well several times until the water runs fairly clear. Put it in a saucepan, cover with cold water, and put the lid on. Once the water boils, turn down the heat and cook for another 10 minutes, then leave it covered so the rice can steam. Stir the rice vinegar together with the salt and sugar and fold it into the rice. 2. Lay a sheet of nori on the rolling mat, shiny side down. Dampen your hands with water and spread the rice over the sheet, leaving about an inch (3 cm) bare along the top. Down the center, lay a strip of trout and some cream cheese; if you like, add a slice of fresh cucumber. 3. Using the mat, roll the filled sheet into a tight log so it holds together, brushing the free edge with a little water to seal it. Cut the roll into 6–8 pieces with a very sharp knife. 4. Arrange the rolls on a baking sheet lined with parchment paper. Top each one with a teaspoon of lightly smoked caviar and sprinkle with grated cheese. Put it in a preheated oven, and once the cheese melts, the rolls are ready!
