- Rinse the currants and let the excess water drain off. Simmer them briefly — just about five minutes — then press them through a fine sieve to remove the skins and seeds. 2. Stir in the sugar and heat over low heat, stirring, until the sugar dissolves. 3. Bloom the gelatin in cold water according to the package directions. 4.
