Classic Split Pea Purée

Make a creamy purée for dinner and treat the family! Split pea purée always disappears in a flash at our house, and there's always a "Can I have seconds?" It really inspires me in the kitchen :) Here's the recipe to share with you.

  • Alright, let's make a batch of truly delicious split pea purée:
    • put the peas in a bowl and cover with water (about 2 cups is plenty); let them soak for 3 hours;
    • peel and finely chop the onion and garlic, add them to a heavy-bottomed pot, and sauté in vegetable oil until translucent;
    • rinse the swollen peas under running water (I tip them into a sieve so I can rinse them well);
    • add the peas to the onion, pour in the water (boiling hot!), season with salt, and set over the heat;
    • once the liquid comes to a boil, reduce the heat to low and cook, covered, for 50-60 minutes.
  • Serve hot.
