Classic "Herring Under a Fur Coat" for the Holidays

Serve up a familiar salad in an unexpected way and surprise your guests! "Herring Under a Fur Coat" (a layered beet-and-herring salad) is one many of us have known since childhood — nothing quite replaces its flavor. But serving it the same old way can feel a little tired. So instead of giving up a favorite, let's plate it in a fresh new format ;)

  • Wash the potatoes, beets, and carrots, boil them until tender, then cool and peel. Do the same with the eggs: hard-boil, cool, and peel.
  • Grate the cooked vegetables on the coarse side of a box grater into separate plates, so they don't get stained by the beets. Separate the egg whites from the yolks and grate each on a fine grater.
  • Now shape the salad into a roll: lay a sheet of foil or plastic wrap on the work surface, then spread the beets out in an even layer, pressing them down, salting, and coating with mayonnaise (use as much as you like). Next add a layer of egg whites (reserve a little for garnish), then carrots, then potatoes, salting and spreading each with mayonnaise. Now it's the herring's turn (I use fillets — I don't like fussing with whole fish); lay it over the potatoes in a narrow strip. Lift one edge of the foil and very carefully roll it up, joining the two edges.
  • Refrigerate the roll for at least 4 hours (overnight if time allows).
  • Then carefully transfer the salad seam-side down onto your serving dish. Only now should you peel away the foil.
  • Garnish the "Fur Coat" with the reserved egg white and yolk and some finely chopped herbs.
