Classic "Herring Under a Fur Coat" with Gelatin

    1. Scrub the potatoes, carrots, and beets well, then boil them until fully tender, cool, and peel. Hard-boil the eggs and peel them too.
    1. Slice the onion into rings, as thin as you can. Pour hot water and vinegar into a bowl, add sugar, stir up the marinade, and add the onion. Leave for 30-40 minutes.
    1. Skin the herring, remove all the bones, and dice the fillet. Peel the carrots, potatoes, beets, and eggs, grate them, and set them out on separate plates.
    1. Put the gelatin in a small bowl, pour over hot water, add the mayonnaise, and stir until completely smooth.
    1. Dress the beets with the mayonnaise mixture, add a little salt, stir, and press into the mold as the first layer (I use silicone molds). Make the next layer with the carrots, dressing them with mayonnaise like the beets. Then add the grated egg, the pickled onion, and the herring. Finish with potatoes dressed in mayonnaise. Pack each layer down well — they should sit tightly against each other.
    1. Refrigerate the molds for 3 hours.
    1. Turn the individual molds out onto a platter, garnish with a sprig of parsley, and serve.
