- Peel and wash the potatoes and cut them into quarters. Peel the onion and cut it in half.
- Put the potatoes in a saucepan, set the onion halves on top, and add water (it should fully cover the potatoes); season with salt. Set the pan over the heat and cook for 25 minutes.
- Meanwhile, heat the milk to a boil in a small saucepan.
- Drain off the cooking liquid, mash the potatoes while gradually adding the hot milk, then crack in the raw egg and stir.
- Add the butter and whip the potatoes smooth with a blender.
- Serve as a side with any dish — I love it with braised vegetables :)
