  • Make the dough:
    • pour the kefir into a deep bowl, crack in the egg, and add the butter and salt;
    • add the sugar, baking soda (the kefir will activate it), and pre-sifted flour, and knead the dough. It comes out springy and elastic and doesn't stick to your hands.
  • Make the filling:
    • boil the rice until done;
    • cover the raisins and dried apricots (you can halve the apricots) with hot water, let them sit for 10 minutes, then drain off the liquid (you can drink it — it's good for you);
    • mix the rice with the dried fruit, add the butter and sugar, and stir.
  • Now for the fun part — shaping the balishi:
    • divide the dough into small pieces (just like for hand pies) and roll each one into a round;
    • place the filling in the center, lift the edges up, and gently pinch them together with your fingers;
    • brush the top of each balish with egg white using a silicone brush;
    • bake in an oven preheated to 355°F (180°C) for half an hour.
