Fig Jam for the Winter
A gourmet dessert made from sweet, fragrant fruit. Figs may look unremarkable, but they pack a lot of natural energy and goodness — nothing quite restores your strength and lifts your spirits like them. Figs are often recommended for sore throats, and the potassium and iron they contain can help with anemia. A real wonder fruit!
Cooking method

Step 1:
If you just harvested the figs, you don't need to wash them. If you bought them, wash them and be sure to pat them dry. Cut off the stems.

Put the figs in a cooking pot, cover with the sugar, add the water, and set over low heat.

Bring to a boil and let the sugar dissolve completely. Boil for 5 minutes, then turn off the heat.

Skim off the foam and let cool completely.

Set it over low heat again, bring to a boil, cook for 5 minutes, and cool again. Repeat this 4–5 times. At the end, boil the jam for 10–15 minutes and pack it into prepared jars.

This amount made two 500 ml (about 1 pint) jars.
