- Wash the green beans. You don't need to cut them — it looks more striking to leave the long pods whole, but you can cut them if you prefer.
- Pour water into a pot, set it on the heat, and bring to a boil.
- Add the beans to the boiling water and cook for 3–4 minutes (uncovered!).
- Drain the beans in a colander and let the water run off.
- In a large bowl, combine the sea salt, ground ginger, black pepper, and sesame seeds, then add the sesame oil, wine, and rice vinegar. Mix everything into a smooth marinade.
- Add the beans to the marinade and toss the bowl vigorously to coat. Let it sit for half an hour so the beans soak up the fragrant marinade, then serve.
