Solyanka with Potatoes in a Slow Cooker
A restaurant-worthy dish right in your kitchen — made in the slow cooker! Solyanka shows up on our table at least as often as classic borscht. It's a fragrant soup with a flavor like nothing else. For some reason, a lot of my friends shy away from making solyanka — which is a shame, because there's really nothing tricky about it. Here's my recipe. (Solyanka is a tangy Russian soup loaded with assorted meats, pickles, and olives.)

- Cut the smoked chicken into small sticks. Peel the casings off the hot dogs and cut them into strips along with the ham.
- Peel the potatoes, rinse them under running water, and cut into strips like the meats — just a bit thicker, so they hold their shape during cooking instead of falling apart.
- Peel the onion and carrot. Cut the onion into small dice and the carrot into thin strips.
- Select the "Sauté" setting, add the onion and carrot to the slow cooker bowl, and drizzle with vegetable oil. Sauté for 3 minutes, then add the potatoes and cook for 15 minutes on the "Bake" setting.
- Meanwhile, cut the pickles into strips.
- Add the prepared meats to the slow cooker bowl — the ham, chicken, and hot dogs — along with the olives and pickles. Pour in the broth (or water), season with salt and pepper to taste, add the paprika (optional), close the lid, and cook on the "Soup" setting for half an hour.
- While the solyanka cooks, wash the green onion and dill, let them dry a little on a paper towel, and chop finely.
- After the beep, let the solyanka rest for 5 minutes, then ladle into bowls.
- Garnish the solyanka with chopped dill and green onion.
- Enjoy!
