Classic Okroshka with Sparkling Water
Whip up a wonderful, refreshing dish — tasty and simple! Who says okroshka is only for summer? In our family we eat it all year round, because it's just so good! I won't argue that it's especially welcome in the summer heat, since it's so refreshing and surprisingly filling. Make okroshka and don't let the weather outside stop you :) (Okroshka is a cold Russian soup, here made with a sparkling-water base instead of the traditional kvass.)

- Boil the potatoes and eggs until done (hard-boil the eggs) and peel them.
- Cut the boiled potatoes and eggs into cubes.
- Peel the cucumbers as well and grate them on a coarse grater.
- Wash the green onion, dill, and parsley, pat them dry with paper towels, and chop finely.
- Cut the ham into cubes about the same size as the other ingredients.
- Rinse the radishes and cut into half-moons.
- Combine everything in one bowl, season with salt and pepper to taste, and stir in the mayonnaise and sour cream.
- Pour in the sparkling water — not all at once, but gradually, stirring constantly, until the okroshka reaches the thickness you like.
- Add the wine vinegar (don't rush to pour in all 40 ml — that's to my taste :), add it little by little), adjust the overall flavor with sugar, and let it chill in the fridge for 1–2 hours.
- Serve the okroshka.
