Classic Okroshka with Sparkling Water

Whip up a wonderful, refreshing dish — tasty and simple! Who says okroshka is only for summer? In our family we eat it all year round, because it's just so good! I won't argue that it's especially welcome in the summer heat, since it's so refreshing and surprisingly filling. Make okroshka and don't let the weather outside stop you :) (Okroshka is a cold Russian soup, here made with a sparkling-water base instead of the traditional kvass.)

    1. Boil the potatoes and eggs until done (hard-boil the eggs) and peel them.
    1. Cut the boiled potatoes and eggs into cubes.
    1. Peel the cucumbers as well and grate them on a coarse grater.
    1. Wash the green onion, dill, and parsley, pat them dry with paper towels, and chop finely.
    1. Cut the ham into cubes about the same size as the other ingredients.
    1. Rinse the radishes and cut into half-moons.
    1. Combine everything in one bowl, season with salt and pepper to taste, and stir in the mayonnaise and sour cream.
    1. Pour in the sparkling water — not all at once, but gradually, stirring constantly, until the okroshka reaches the thickness you like.
    1. Add the wine vinegar (don't rush to pour in all 40 ml — that's to my taste :), add it little by little), adjust the overall flavor with sugar, and let it chill in the fridge for 1–2 hours.
  • Serve the okroshka.
