Canned Pollock Salad
A standout dish for your celebration table! I made this salad for a romantic candlelit evening — it looks beautiful and elegant, and of course it tastes wonderful. It also made an appearance at my last holiday spread, and everyone loved it!

- Pick out some pretty footed dessert glasses, or use small bowls.
- Boil the potatoes and eggs, let them cool, and peel them.
- Line the bottom and sides of the glasses with lettuce leaves.
- Put the fish on a plate, draining off the oil first, and mash it with a fork. Spoon it into the prepared glasses and spread a thin layer of mayonnaise on top.
- Grate the boiled potatoes, season with salt and pepper, layer them over the pollock, and spread with mayonnaise as well.
- Rinse and pat dry the tomatoes, dice them small, and add as a separate layer. Season lightly with salt and pepper, spread with mayonnaise, and sprinkle with grated egg.
- Cover the egg with a layer of mayonnaise too (I keep it as thin as possible) and top with grated cheese (grate it right into the glass).
- Garnish with tomato wedges and scattered green onion.
