Bolognese Sauce for the Pantry

Your spaghetti will always taste amazing with a jar of this on hand! Once I tried canning Bolognese sauce, I realized what a game-changer it is! Now I can throw together the Italian dishes my whole family loves in a fraction of the time. I've given this sauce its own dedicated shelf in the pantry — it's officially my must-have :)

  • This amount makes about six 1-quart (1-liter) jars of wonderful sauce. So let's get started...
    1. Wash the tomatoes and cut them into small cubes. Put them in a pot, set over the heat, and cook for 2.5 hours, stirring now and then.
    1. Peel the onion, chop it small, and sauté it in olive oil until translucent.
    1. Peel the garlic, mince it finely, and sauté it in olive oil along with the onion for a couple of minutes.
    1. Put the tomato paste in a bowl, stir in a little of the tomato liquid from the pot, then add the mixture to the sauce.
    1. Meanwhile, stir the salt and sugar into the tomatoes. Add the paprika, cook for 2 minutes, then add the oregano and the finely chopped parsley and basil.
    1. After about 5 minutes, stir in the sautéed onion and garlic and cook for another 5 minutes.
    1. Finally, add the black pepper and chili, and pour in the wine vinegar.
    1. Let it simmer for about three minutes, then ladle it into sterilized jars. Seal the jars, turn them upside down, wrap them in a warm blanket, and leave them until completely cool.
    1. Once cooled, move the jars to your storage spot.
