Cooking method
Wash the beef thoroughly, put it in a saucepan, add the bay leaf, pour cold water to the top and cook after boiling for one and a half to two hours, removing the resulting foam.
Peel the onion, remove the seed capsule from the pepper. Vegetables are washed and finely chopped, then fried in vegetable oil. Add tomato paste to the fried vegetables, mix.
Nuts are crushed into crumbs in any convenient way (for me there is nothing better than a blender). Peel the garlic and squeeze it through a press into a nut crumb, mix and add to the roast, removing it from the heat.
Filter the broth through a sieve for transparency, cut the meat into portions and return to the filtered broth.
We send the pan back to the fire and when the broth boils, pour out the rice.
After 10-15 minutes, we put tkemali sauce, toasted with nuts, ground red pepper, hops-suneli, salt into the soup. We wash the cilantro, finely chop it, and send it to the kharcho. Cook for another five minutes and remove from the heat.
Cover the kharcho soup with a lid and let it brew.
After 20-30 minutes, the dish can be poured on plates and served on the table.
