Beef Kharcho with Bell Pepper and Walnuts
Make the famous soup that so many have come to love! Who hasn't heard of kharcho? This well-known dish is a favorite in my family. The soup is spicy, rich, fragrant, and gently hot. You've got to try it!

- Rinse the beef well, put it in a pot, add the bay leaves, cover it with cold water to the top, and cook for an hour and a half to two hours after it boils, skimming off any foam. Peel the onion and remove the seed core from the bell pepper. Wash and finely chop the vegetables, then sauté them in vegetable oil. Stir the tomato paste into the sautéed vegetables. Grind the walnuts into crumbs however is easiest (for me, nothing beats a blender). Peel the garlic and press it into the ground walnuts, stir, and add this to the sautéed vegetables after taking them off the heat. Strain the broth through a sieve so it's clear, cut the meat into serving pieces, and return it to the strained broth. Put the pot back on the heat, and when the broth boils, add the rice. After 10–15 minutes, stir in the tkemali sauce, the walnut sauté, ground red pepper, khmeli-suneli, and salt. Rinse the cilantro, chop it finely, and add it to the kharcho. Cook for another five minutes, then take it off the heat. Cover the soup and let it rest. After 20–30 minutes, you can ladle it into bowls and serve. Enjoy in good health!
