Classic Pork Kharcho
A wonderful dish for lovers of Georgian cooking. My husband loves spicy food, and kharcho is right at the top of his list of favorites. I'm a fan of a rich, fragrant, spiced meat soup too. Georgians usually make kharcho with lamb or beef, but I'm suggesting a small break from tradition with a pork version. Try it — it's so good!

- Rinse the pork under running water and cut it into serving pieces. Put it in a pot, cover with cold water, and cook until fully done. 2. Peel the onion, dice it small, sauté it in sunflower oil until translucent, then add it to the broth. 3. Rinse the rice 3 times, until the water runs clear, and add it to the broth as well. 3. Wash the tomatoes, scald them with boiling water, and peel off the skins. Dice the tomatoes small. 4. Grind the walnuts in a blender. 5. Add the prepared tomatoes to the broth along with the tomato paste and cook for 15 minutes. 6. At this point, add the salt, ground walnuts, tkemali sauce, finely chopped parsley, crushed garlic, bay leaf, and khmeli-suneli. And don't forget the red and black pepper (this is a spicy dish, after all), paprika, and chili. Wait 5 minutes, then take the pot off the heat. Your kharcho is ready to serve! Enjoy in good health!
