Cooking method

  1. Step 1:

    Step 1

How do you make Man's Caprice salad with chicken and mushrooms? It's very simple. First, gather the ingredients from the list. You can swap the chicken for any other meat — turkey, beef, or pork — but keep in mind that this will change the calorie count and the cooking time.

  2. Step 2:

    Step 2

Wash and pat dry the chicken breast and cut it into small cubes. Sprinkle the chicken with the spices and let it marinate for 20 minutes.

  3. Step 3:

    Step 3

    Dice the onion.

  4. Step 4:

    Step 4

Heat some vegetable oil in a skillet over medium heat, add the onion, and sauté, stirring, for 3–4 minutes until translucent.

  5. Step 5:

    Step 5

Add the chicken to the onion and cook everything together, stirring, until lightly golden.

  6. Step 6:

    Step 6

Hard-boil the eggs, cool, and peel them. Separate the whites and yolks. Grate the whites on the coarse side of a grater. Grate the yolks on the fine side — you can grate them now or directly over the salad, where they'll come out fluffier.

  7. Step 7:

    Step 7

Wash the dill, shake off the water, and chop it finely. If you like, swap it for or add other herbs, such as parsley or cilantro, or use a mix.

  8. Step 8:

    Step 8

Lift the honey mushrooms out of the brine and pat them dry. Besides honey mushrooms, you can use other kinds, including button mushrooms — pickled or sautéed.

  9. Step 9:

    Step 9

Set a ring mold on a plate. Add the chicken and onion and press it down. Drizzle mayonnaise over the chicken. I put the mayonnaise in a piping bag and snip off the tip — it's easier than using a spoon.

  10. Step 10:

    Step 10

Spread the grated egg whites as the next layer and drizzle them with mayonnaise. You can salt some layers if you like, but I usually don't add salt to mayonnaise salads — the mayo is plenty.

  11. Step 11:

    Step 11

Add the grated yolks over the whites and drizzle with mayonnaise too.

  12. Step 12:

    Step 12

Sprinkle the chopped herbs over the top of the salad.

  13. Step 13:

    Step 13

Pile the pickled honey mushrooms in the center, on top of the dill. Chill the salad in the fridge for 1 hour so the flavors meld.

  14. Step 14:

    Step 14

Remove the ring mold before serving. If you'd rather not use a mold, you can simply serve the salad in a bowl. Enjoy!

  • Since everyone's preferred level of saltiness, sweetness, bitterness, spice, tartness, and heat is different, always add spices and seasonings to your own taste! If you're using a seasoning for the first time, keep in mind that some are especially easy to overdo (chili pepper, for example).
  • It's best to make the mayonnaise yourself — tastier and better for you. Look up some good homemade mayonnaise recipes. You can also use sour cream or plain yogurt as the dressing instead of mayonnaise, on their own or mixed with mayo in any ratio you like — that will cut the calories.
  • How do you hard-boil eggs? To keep them from cracking, put them in cold water and cook over low heat. Boil for 9 minutes after the water comes to a boil, then cover with cold water and let them cool. The sudden temperature change makes them easier to peel.
