  • Wash the plums, put them in a pot, add a little water (just 150 ml / about 2/3 cup), and bring to a boil — the goal is to soften the fruit — then cook for about 10 minutes. Next, press the plums through a coarse sieve to separate the pulp from the pits. Rinse the cilantro, mint, and anise. Peel the garlic. Put the prepared herbs, garlic, and chili in a blender and blend. Add the green plum purée to the spicy herb mixture, season with salt, and blend everything together once more.
