Homemade Pork Sausages

Make delicious sausages right at home! Sausages really are an all-purpose food — great with a side for dinner or breakfast, in a burger, on a sandwich, or simply alongside a salad. And kids adore them! Sadly, the store-bought kind usually aren't good enough quality to feel right about feeding to children. Make them at home and you can be sure exactly what's in them.

  • Rinse the meat, remove any membranes, and cut it into small pieces. Run it through a meat grinder a couple of times, using the finest plate. In a small bowl, combine all the spices, salt, and sugar, add them to the ground meat, stir, then pour in the cold milk. Once all the liquid is absorbed, blend the mixture into a smooth paste. Work the powdered milk into the meat paste. Loosely stuff the prepared casings with the meat mixture (a sausage-stuffing attachment helps), keeping air pockets out. Twist the filled casing into links every 15 cm (about 6 inches). Preheat the oven to 195°F (90°C) and hold the sausages on a baking sheet inside for one hour. Then poach the sausages in water held at 167°F (75°C). The time depends on the diameter (roughly 15 to 25 minutes). Remove the finished sausages and quickly rinse them under cold water. Now they can go into the refrigerator or freezer, to be pulled out as needed. Right before eating, boil or pan-fry the sausages for 3 minutes.
