- Start with the hollandaise sauce. Separate the whites from the yolks and refrigerate the whites (they'll come in handy for other treats — meringue, for example). Blend the yolks with the salt, lemon juice, and paprika. Melt the butter in the microwave, add it to the yolks, and blend again. Pour the sauce into a saucepan and warm it over a double boiler, whisking constantly. As soon as it begins to thicken, take the pan off the heat and set it in a bowl of cold water so the yolks don't scramble. Chill the finished sauce in the refrigerator for 30 minutes. Toast the bread in a toaster, or brown it on both sides in a dry skillet (no oil!). Now poach the eggs: pour water into a small pot and add salt. When it comes to a boil, crack an egg into a cup (gently, so the yolk stays intact), stir the water into a swirl with a spoon, then hold the cup close to the surface and slip the egg into the spinning water in one quick motion. Cook for 2–3 minutes, then lift the egg onto a paper towel to blot off the excess water. Now build each one: set a slice of ham on the cooled toast, top with a poached egg, and finish with the hollandaise. Serve on a platter, garnished with chopped green onion. Enjoy!
