Rum Baba with Glaze
A grown-ups' treat that will keep your party lively! Rum babas are wonderfully rich little yeast cakes soaked in a generous, boozy syrup. They're a delicious treat with coffee or tea — and a real pleasure to make.

- In a large, deep bowl, combine the sifted flour with the sugar, then add the salt, the lemon and orange zest, and the honey. 2. Melt the butter. 3. Add the eggs to the flour mixture one at a time, then mix in the melted butter and the yeast dissolved in the milk. 4. Knead the dough with a mixer on medium speed (or by hand). It's ready when it no longer sticks to the paddle (or your hands) and stretches well. Fill the molds halfway with dough. Let it rise for 15–20 minutes. Bake at 400°F (200°C) until golden, which takes 30 to 40 minutes. You can flip them to brown the bottoms as well. Make the syrup: stir the water into the sugar and warm it over the heat until dissolved. Add the rum and vanilla. Cut the orange and lemon into pieces and drop them into the syrup. Set all the cakes into the warm (it must be warm!) syrup and leave them to soak for 20 minutes. Make the glaze: add the water, vanilla, and rum to the apricot confiture and heat it until the confiture has fully melted. Strain it through a sieve and brush it over the syrup-soaked babas. To decorate, whip the cream with the powdered sugar and a little vanilla. Top each rum baba with a dollop of the cream and a strawberry, and serve. So pretty and so good!
