Salad with Yardlong Beans, Cheese, and Cherry Tomatoes

A super-nutritious, amazingly tasty salad! Eat healthy and beautifully! What I love about yardlong beans is their amazing flavor, heartiness, healthfulness, and versatility — there's no end to what you can make with them! And the vigna variety is prized for its high yield, excellent taste, and great nutrition. Just two plants give our family a bean supply for the whole next winter — we usually freeze the beans. Here's my favorite dish made with them, delicious and beautiful!

    1. Wash the yardlong beans, cover them with cold water, set the pot over medium heat, and bring to a boil. 2. Add salt, cook the beans for 4–5 minutes, then drain them in a colander to remove excess water. 3. Wash the cherry tomatoes and cut them in half. 4. Whisk together the vinegar, olive oil, a little salt, and your favorite spices if you like. 5. Put the beans in a bowl. 6. Slice the feta and Parmesan and add them to the beans. 7. Dress the salad with the vinegar-and-oil mixture. 8. Arrange the finished salad on a nice platter and serve. Enjoy!
