Velvet Layered Salad with Crab Sticks
A pretty, mayonnaise-dressed layered salad! Make it, share it, dig in! This salad is delicious, beautiful, and even a little good for you in spots (the fresh carrot, for one). It makes a striking centerpiece on a holiday table.

- Boil the potatoes and eggs ahead of time, then cool and peel them. Finely chop the onion and marinate it in the water with the vinegar, salt, and sugar for 15–30 minutes. 2. Set up a bowl for the layered salad, or use a serving plate with a ring mold. 3. First layer: potatoes grated on the coarse side of a box grater, salt, and mayonnaise. 4. Second layer: coarsely grated eggs and mayonnaise. 5. Third layer: diced crab sticks and mayonnaise. 6. Fourth layer: the pickled onion. You can use fresh green onion instead of pickled if you prefer. 7. Fifth layer: cheese grated on the medium side, and mayonnaise. Save a little cheese for the top. 8. Sixth layer: finely chopped fresh herbs. 9. Seventh layer: fresh carrot grated on the medium side, and mayonnaise. 10. Sprinkle the reserved grated cheese over the salad and decorate however you like. 11. Let the salad sit so the layers soak together. Enjoy!
