Rice Noodle Salad with Shrimp

Glass noodles with seafood for an unforgettable dinner — and it's so good! Asian food is a hit in our house, and this recipe has become a favorite. Now, whenever I want something a little different for dinner but don't have the time or energy for a long cook, funchosa (cellophane glass noodles) with shrimp comes to the rescue — it turns out to be a really mouthwatering dish.

  • For this dish you'll need a package of glass noodles, some vegetables, and seasonings. Start with the vegetables: peel the onion and cut it into medium pieces, and core the bell pepper. Heat the vegetable oil in a skillet, add the onion, and fry for a few minutes. Add the chopped pepper and cook for another 4 minutes, then take the pan off the heat and cover it. In a separate bowl, pour boiling water over the shrimp and let them sit for 2 minutes, then drain in a colander. In another bowl, pour boiling water over the noodles; let them stand for 4 minutes, then drain well. Add the shrimp to the vegetables and return the pan to the heat. Cook until the shrimp pick up an appetizing golden color. Stir in the finely chopped garlic and ground black pepper, mixing well. Now add the noodles along with a little salt (keep in mind the soy sauce is already salty, so go easy on the salt at this stage). Stir again, pour in the soy sauce, and keep the pan over the heat for another 5 minutes. Your glass noodles with shrimp are ready. Enjoy!
