Step 1:
Soak the beans for 4 hours in cold water. Put the goose meat, beans, bay leaf and pepper on the bottom of the pan. Pour cold water. Put it to boil for 2 hours.
Step 2:
Cut carrots into thin semicircles. Cut the onion into cubes.
Step 3:
Finely chop the garlic. Cut the goose fat into pieces and heat it in a frying pan.
Step 4:
Remove the pork rinds, fry the onion, carrot and garlic in the melted fat.
Step 5:
Cut the potatoes into cubes and add to the broth. Remove the meat and cut into cubes. Put it back in the pan. When the potatoes are ready, add the roast, salt, pepper and sprinkle with chopped herbs. Let it boil for 5 minutes.
