Bean and Goose Soup
Goose-based soups are the most aromatic in the world — and this one is seriously delicious! Just remember to soak the beans ahead of time.
Cooking method

Step 1:
Soak the beans in cold water for 4 hours. Place the goose meat, beans, bay leaf, and peppercorns in the bottom of a pot. Cover with cold water. Bring to a simmer and cook for 2 hours.

Step 2:
Cut the carrots into thin half-moons. Dice the onion.

Step 3:
Finely chop the garlic.
Cut the goose fat into pieces and render it in a skillet.

Step 4:
Remove the cracklings, then sauté the onion, carrot, and garlic in the rendered fat.

Step 5:
Dice the potatoes and add them to the broth. Lift out the meat, cut it into strips, and return it to the pot. Once the potatoes are tender, stir in the sautéed vegetables, season with salt and pepper, and sprinkle with chopped herbs. Let it simmer for 5 minutes.
