  • Add the semolina to boiling water and let it swell, then pour in the milk and whisk constantly so no lumps form. Cook until done, seasoning with salt, sugar, and butter to taste. Peel the apple and cut it into cubes. Blanch the apple in water with a little sugar. Stir the cooked apple into the finished porridge and dust with cinnamon. Spoon the porridge into a bowl, scatter the almonds on top, and garnish with mint. Serve with a sea buckthorn purée — to make it, blend the sea buckthorn 50/50 with sugar and press through a sieve.
