    First, get the rice cooking. While it cooks, prep everything else: cut the cooked chicken and canned pineapple into small, even pieces, and chop the green onion.

    Heat a large skillet with 3 tablespoons of vegetable oil over medium heat. Add the green onion, chicken, and frozen peas, and stir-fry for a few minutes until the onion softens. Then add the pineapple and cook another 2–3 minutes, until it caramelizes slightly.

    Beat 2 raw eggs and pour them into the chicken-and-vegetable mixture, stirring quickly. After 1–2 minutes, add the cooked rice, sugar, salt, and spices. Cook for 3 minutes, stirring constantly.
