Black Prince Salad with Chicken and Prunes

This original salad will earn a place of honor on your holiday table. Its strength is how well the ingredients complement one another. It's quick and easy to make — great for a family meal, but just as fitting for a festive spread. Prune fans are sure to love it, and the processed cheese gives this tasty dish a tender texture. It's worth noting there are several ways to make Black Prince salad. Some cooks use hard cheese, but to my taste it comes out more tender with processed cheese. Some add eggs, some don't; some like to add fried mushrooms. And one more thing: if you're in a hurry, it's easier to just chop everything and mix it with mayonnaise; if you have time, you can layer the ingredients on a dish, spreading mayonnaise between the layers. The choice is yours! Here's the version that my family and I love.

Cooking method

    Toast the walnuts in a dry skillet until golden — it makes them tastier and crunchier. Let them cool.

    Cook the chicken leg quarters in a pot with bay leaf, salt, and black peppercorns until done. Lift them out of the broth and let them cool. (You can use chicken breast instead, but the leg meat is richer and makes a more tender salad.)

    Cut the red onion into quarter-rings.

    Pour the hot marinade over the onion. Cover and let it steep until fully cooled. Once cool, drain off the liquid and squeeze the onion. You can leave it in the marinade for a few hours for a more intense flavor. The onion takes on a pretty raspberry color.

    Wash the prunes, soak them in water for a few hours, squeeze them out, and cut them into strips. Set 2 aside to garnish the salad.

    Chill the processed cheese in the freezer for about 20 minutes — that makes it easier to grate. Grate it on the coarse holes.

    Chop the cooled walnuts.

    Pull the chicken meat off the bones and skin and cut it into cubes.

    Start assembling the salad. First layer: chicken. Season with salt to taste and ground black pepper (optional, if the meat needs it after cooking in the broth).

    Since the pickled onion is plenty juicy, you can skip spreading mayonnaise on the chicken and instead spread it over the onion layer.

    The next layer is prunes and mayonnaise.

    Then coarsely grate the yolks of the hard-boiled eggs over the top. You can add a little salt (optional).

    Then add a layer of grated processed cheese. Gently even out the salad and cover it with a thin layer of mayonnaise.
