Chicken Soup with Toasted Spider-Web Vermicelli
Wonderful flavor and easy to make! The trick to this soup is toasting the noodles first, which gives the finished dish a nutty note in both taste and aroma.
Cooking method

Step 1:
Boil the chicken, remove it from the pot, and let it cool.

Strain the broth.

Dice the onion and cut the carrot into small sticks.

Sauté them in vegetable oil until soft.

Step 5:
Add the tomato paste and simmer for 3 minutes.

Step 6:
Pull the cooled chicken meat off the bones and chop it.

Step 7:
Dice the potatoes.

Step 8:
Add them to the boiling broth. Season with salt.

Step 9:
Pour the spider-web vermicelli into a hot, dry skillet (no oil).

Toast it until golden, stirring constantly — the noodles brown very quickly.

When the potatoes are nearly done, add the sautéed carrot and onion to the broth.

Cook for 2 minutes.

Add the chicken.

Then the toasted vermicelli.

And 2 garlic cloves. Cook for 3 minutes, then turn off the heat and let the soup rest.
