Panna Cotta with Condensed Milk and Strawberry Confiture

Treat yourself to silky panna cotta with fragrant strawberry confiture! The panna cotta comes out wonderfully tender, and the strawberry confiture adds a pleasant tang. Instead of strawberries, you can use raspberries or wild strawberries. To make the confiture you'll need a pectin-based jam-setting mix — my packet is meant for about 2 lb (1 kg) of berries. I made the confiture following the directions on the package, so you may need to adjust slightly depending on the brand. If you can't find a mix like that, I think you could thicken the strawberries with a little cornstarch instead.

    Let's make the panna cotta.

    Pour the milk, cream (I used 15%), and condensed milk into a saucepan. Stir, bring to a boil, and cook at a gentle boil for 5 minutes.

    Cover the gelatin with water (just enough to barely cover it) and leave it for a few minutes to bloom.

    Warm the bloomed gelatin in the microwave or on the stove until it dissolves (don't let it boil).

    Strain the milk-and-cream mixture, add the dissolved gelatin, and stir.

    Pour into glasses or dessert cups. Let the panna cotta cool, then refrigerate until set.

    Now make the strawberry confiture.

    Cut the strawberries into quarters (don't thaw frozen berries first). Add 1 heaping tsp of the jam-setting mix, stir, set over heat, and bring to a boil.

    Add the sugar, bring back to a boil, and cook for 1–2 minutes. Let the finished confiture cool completely.

    Just before serving, spoon the confiture over the panna cotta and garnish with mint leaves. Enjoy!
