  • This fish couldn't be simpler to make, and the flavor is absolutely incredible. Thaw the mackerel, clean it, rinse, and cut it into pieces about 1 inch (2 cm) thick. Place them in a non-reactive bowl (avoid plastic). For the brine, bring the water to a boil, add all the spices and salt, and simmer for 20–25 minutes. Let it cool, then pour the brine over the fish. Set a small plate on top so the fish stays fully submerged. After 12 hours, lift the fish out of the brine and transfer it to a jar. Enjoy!
