Herring Salad with Apple

This quick little salad easily takes the edge off your hunger and dresses up a holiday table. It's the fastest, most fuss-free herring salad I know! It's a dish for every occasion — casual or fancy. Right now I whipped it up as a quick snack for myself, but I make it for the holidays just as often.

    The herring I'm using here is pickled, but salted herring works too.

    If you go with salted herring, use a tart apple rather than a sweet one and add a bit more fresh cucumber. The greens you see in the photo just before serving are dried parsley — I crumbled a few leaves between my palms. Chop everything into bite-size pieces, combine, and add a spoonful of sour cream if you like.

    That said, salt, pepper, and herbs are all optional in this salad.
