The great thing about dried potatoes is that they keep for a long time! Honestly, I don't see much need to put up dried potatoes for the winter — in most places you can buy potatoes at a reasonable price any time of year. But this recipe is handy for anyone living somewhere more remote, where fresh potatoes might be hard to come by in the middle of January.
