    1. Make the pancake batter (these are pancakes made with mineral water): mix all the ingredients. The batter should be thin. 2. Fry the pancakes using the sparkling water, without adding any oil. 3. Make the custard: whisk the yolks with the sugar and add the flour. Heat it, then pour in the milk along with the cinnamon and vanilla sugar. Without letting it boil, cook for 5–7 minutes, stirring constantly. Remove from the heat, cool, and stir in the butter. The cinnamon pancakes come out wonderfully fragrant with this cream. 4. Toast the sesame seeds in a hot skillet with a drop of vegetable oil. 5. Crush the cookies. 6. Spread cream over each pancake in turn, sprinkling sesame seeds on every other one. 7. Top with the crushed cookies and sesame seeds.
