  • Boil the potatoes, beets, carrots, and eggs. Finely chop the peeled onion; if it's sharp, you can scald it with boiling water. Peel the vegetables and eggs. Choose a wide, flat-bottomed dish for this salad—I have two nice herring platters that work perfectly. Lay the herring down as the first layer, spreading it evenly over the bottom and pressing it gently with your hand. I cut the fillet fairly coarsely, but that's a matter of taste. The second layer is the onion—distribute it evenly over the herring. All the vegetables and eggs need to be grated on a coarse grater as you build the layers. Grate the potatoes and add them as the third layer, distributing them so the onion is hidden. Spread the potato layer with mayonnaise. Grate the eggs for the fourth layer. As before, lay each new layer so it covers the one beneath, and spread the egg layer with mayonnaise too. Now grate the carrots and spread them over the eggs, then coat with mayonnaise. Grate the beets last. Spread this final beet layer evenly, shaping the salad with your hands. All that's left is to decorate the "Herring Under a Fur Coat"—and that's down to your imagination. To make a mayonnaise lattice, cut a small hole in the mayonnaise packet and pipe a thin stream over the surface in a crosshatch pattern. I also decorated mine with green peas and sprigs of fresh herbs. You can dress it up with onion rings; flowers cut from beets, carrots, or tomatoes; grated egg yolks; cucumbers; and so on. It's best to make "Herring Under a Fur Coat" ahead of time so it can sit in the fridge for at least two hours. During that time all the layers soak up the mayonnaise, making the salad even tastier.
