Potato Gombovtsy (Sweet Potato Dumplings)
The familiar lazy dumplings, done the Ukrainian way! Very tasty! In Russian cooking this dish is called lazy vareniki; in Czech cuisine, sweet knedlíky. But they're especially beloved in Hungarian and Western Ukrainian (Transcarpathian) cooking, where they're called gombovtsi.

Cooking method
- Boil the potatoes and mash them. Add the flour and knead into a dough. Roll the dough into ropes and cut into pieces. Dust a board with flour and lay the gombovtsy out so they don't stick together. Chop the nuts and put them on a plate; put the shredded coconut on a second plate and the sugar mixed with vanillin on a third. Cook the gombovtsy in boiling water until they float to the top. Lift them out with a slotted spoon and dip them in the oil, then in the sugar, nuts, or coconut. You can also tuck a little jam or plum butter into the center of each gombovets.
