- Boiling turkey with vegetables is easy enough for even a first-time cook. Cut the turkey into serving-size pieces, rinse them, and drop them into boiling water. Once it comes to a boil, foam will rise to the surface — skim it off, and keep skimming until the meat is done. Next, peel the vegetables, cut them into small, even pieces, and add them to the pot with the water and meat. The soup needs to cook for about 1.5 to 2 hours, depending on the bird: a young turkey takes a little under an hour, while an older one may need more than 2 hours. Then salt the soup and cook until everything is tender. As soon as the vegetables are done, arrange them in groups on a large platter, spoon a little broth over them, and sprinkle with chopped dill or parsley. You can serve the broth in a gravy boat; for a thicker version, whisk a little flour into the broth and simmer until it thickens — just be sure to do this after you've removed the meat and vegetables.
