Homemade Cherry Marmalade
What makes this marmalade so great is that it's made right at home! I love cherry compote made from scratch with cherries I've picked myself. But kids are always after something new, so they decided to make marmalade. We'd done apple-and-plum before, but this time they had their hearts set on cherries — and we had plenty of them.
We spent a long time hunting for a recipe. I figured they'd give up when they couldn't find one, but no — they managed to dig one up somewhere. I don't know what got into them; they were practically dreaming about homemade cherry marmalade. I let them make it themselves, on one condition: clean up every mess they made and eat everything they cooked, even if it didn't turn out tasty.
So, here's how to make marmalade.

Wash the cherries well

Pit them and let them sit for 2 hours

Set over high heat and stir

The cherries will release even more juice; cook them until the juice thickens a little.

Then add the sugar. We're nearly done now. Once it comes back to a boil, cook it a little longer so it thickens up a bit more. The longer you cook it, the thicker your marmalade. While it's still cooking it may look runny, but keep in mind that it thickens even more as it cools. Don't overcook it. How do you check if the marmalade is done? Drop a little onto a plate — if it doesn't run once it's cooled, it's ready :)

Wash, sterilize, and dry the jars.

Spoon the marmalade into the DRY!!! jars and let it stand for a bit.

Once a skin forms on top, you can cover it with parchment. I like to store this treat in the refrigerator, where it keeps almost until spring. As for exactly how long it'll last — I couldn't tell you. Usually, if you've got kids around, things like this don't stick around the house for long :)
