  • Who doesn't love pudding? A wonderful treat whose flavor is often hinted at just by the list of ingredients. Beyond its amazing aroma and delicate taste, this dish is also beautiful, wholesome, and never gets old. Here's a recipe everyone will love — one that'll have you making vanilla pudding again and again. Halve the strawberries for the pudding. Peel and pit the apricots and cut the flesh into slices. Pour 80 ml of red currant juice over the fruit, add the zest and sugar, and bring it all to a boil. Stir the starch into the remaining juice and add it to the fruit in a thin stream, stirring constantly. Bring the mixture to a boil, let it cool, and remove the zest. For the cream, soak the gelatin in 100 ml of cold water for about 30 minutes, then set it in a sieve to drain. Bring the milk to a boil, stir in the vanilla sugar, and let it cool a little. In a double boiler, whisk the yolks and sugar; pour in the milk while stirring and let it cool slightly. Add the gelatin and warm the mixture until the gelatin dissolves. Cool the custard, letting it set up a bit. Whip the heavy cream and crush the nut brittle. Fold both into the custard and mix. To serve, layer the brittle cream and the fruit pudding into 4 dessert glasses. How to garnish? For beauty and aroma — lemon balm and berries.
