  • You can buy cured salmon at the store these days, but it's pricey and the flavor just isn't the same. You can do far better at home — and here's a recipe that may seem odd at first, because we're not curing with vinegar but with orange juice. The aroma is wonderful and the fish comes out irresistible. Serve it with any side dish, or simply with a beer.
  • Buy salmon — fillets are best. If there are any bones, remove them, but leave the skin on. Finely chop the dill, and crush the caraway and coriander seeds with an ordinary bottle. Don't use a coffee grinder; it turns everything to powder, which gives a slightly different flavor than we want. Now squeeze the juice from the oranges, put it on the heat, and reduce it by half.
  • Lay a layer of fish in a dish, salt the top, and sprinkle with the spices and the juice. Cover with a cloth and let it sit in a warm spot for an hour — no longer. Then move it to the refrigerator for another five or six hours. To serve, I slice it thin and arrange wedges of lemon alongside.
