  • Give this shrimp soup a try. It turns out very light, but still tasty and wholesome, since shrimp are packed with vitamins and minerals. So, how do you make it? Peel the carrot and potatoes; grate the carrot and cut the potatoes into sticks. Wash the bell pepper, remove the core, and dice it. Finely chop the onion, and slice the olives into rings. Cut up the trout (or any other red fish) and put it in a large pot, then cover with water. Set it over the heat. When the water comes to a boil, add salt, then the onion and potatoes. After about 10 minutes, add the shrimp — be sure to peel the shells off ahead of time — along with the grated carrot. Another 10 minutes later, toss in the olives and bell pepper. Just before turning off the heat, add the squid and let it cook for about 3 minutes. Now the shrimp soup is ready to come off the stove. Ladle it into bowls and garnish with fresh parsley and dill. Lemon wedges or a boiled egg make a nice addition.
