Chicken and Bean Salad

You can always use a new salad — give this one a try! Recently I made a zesty chicken and bean salad. It turned out really tasty (with tender smoked chicken!) and filling, since beans and chicken are both excellent sources of protein. Give this simple dish a try.

  • Take a can of beans packed in their own liquid — red or white, your choice. I prefer red myself, but white works just as well! Remove the skin and any bones from the chicken breast, then cut it into small cubes or strips. Hard-boil the eggs and chop them, and finely chop the onion too. For extra zing, use a sweet red onion instead of a white one. Toss the salad together and dress it with sour cream or mayonnaise. Season with salt to taste. Serve it on a plate lined with large lettuce leaves and sprinkle finely chopped parsley over the top.
