  • First, press the fresh cottage cheese through a sieve, then stir it into boiling milk. Heat everything over low heat until the curds turn rubbery and stringy and the milk has reduced. Then tip the curd mixture into a sieve to drain off the liquid. Melt 2 tablespoons of butter in a saucepan, add the curds, and heat (stirring) for 6–10 minutes until the cheese turns stretchy. Then stir in a beaten egg, salt (be generous, but don't overdo it), and caraway seeds to taste. Pour the finished cheese into a deep dish and cut it into 100–150 gram portions. It's best to chill it in the fridge for about 6 hours, which gives it a richer, fuller flavor. Enjoy, friends!
