  • Tabbouleh is a simple salad — really tasty and good for you, and perfect for vegetarians or anyone eating healthy. Put the bulgur in a heavy-bottomed bowl, pour boiling water over it, cover tightly, and let it sit for half an hour. It helps to wrap the bowl in a towel so the bulgur steams and soaks up all the water. Rinse and dry the parsley and green onion; you'll only want the parsley leaves. Chop the herbs as finely as you can — the finer, the better. Dice the tomatoes (if they're very juicy, drain off the excess liquid). For more aroma, tear the mint by hand rather than cutting it with a knife. Add the prepared bulgur to the herbs, tomatoes, and mint. In a separate bowl, whisk together the olive oil, the juice of one lemon, and salt until the mixture turns pale and creamy. Pour the dressing over the salad and toss well. Your fragrant salad is ready! If you have lettuce leaves on hand, you can serve the tabbouleh over them. Serve it cold — it's a great addition to a summer picnic spread.
